Food Recipe [Healthy Meal Ideas]: Lemon Chicken with Broccoli

What else could you ask for than a healthy and tasty recipe that takes no time? This lemon chicken with broccoli is one of my favorite dishes. It is light, tangy, and a bit sweet which makes it perfect for lunch or dinner when you want something nice and comforting but still healthy.

A quick reminder, this is not my recipe. I have been cooking it for years, and I have to be honest I do not even remember where I first got it. To be honest it is one of those recipes that have become apart of my cooking repertoire because it is easy, tasty, and never disappoints.



 Ingredients

  • 1 head of broccoli (cut into bite-sized pieces, including the stem if you like, just peel the outside part!)

  • 250 g green beans

  • 2 ½ tbsp cooking oil (any kind you prefer)

  • 2 lemons (juice and zest if you want extra flavor)

  • ⅓ cup honey

  • 1 tsp onion powder

  • 1 ½ tbsp soy sauce

  • 2 tsp sesame oil

  • 1 ½ tbsp cornstarch (for thickening)

  • Chicken (sliced thinly, breast or thigh, whichever you prefer)


 Instructions

  1. Prep the veggies.

    Wash and slice your broccoli into bite-sized pieces. You can also slice the stem, just remove the fibrous outer layer. Do the same for your green beans.

  2. Cook the chicken.

    Heat about 1 ½ tablespoons of oil in a pan. Once it’s hot, add your chicken slices and cook until lightly browned and almost done. Remove and set aside.

  3. Sauté the veggies.

    In the same pan, add the rest of your oil. Toss in the broccoli and green beans. Stir-fry them for a few minutes until they’re bright green and a bit tender.

  4. Make the sauce.

    In a bowl, mix together your lemon juice, honey, onion powder, soy sauce, sesame oil, and cornstarch. Stir well until smooth.

  5. Combine everything.

    Pour your sauce into the pan with the veggies, then add the chicken back in. Stir everything together and let it simmer until the sauce thickens and coats everything beautifully.


Extra: 

In case you are a fan of extra lemon flavor, do not hesitate to add a pinch of zest just before serving. That refreshing kick is what makes this dish tastier.

With chili flakes, it could be made spicier or it could be transformed into a meal prep dish with rice or quinoa.
