Easy Teriyaki Marinade Chicken (Not My Original Recipe)

Teriyaki chicken is always a good choice if you want something savory, a little sweet, and very filling. This version uses a simple homemade marinade that works well for grilling, pan-searing, or baking.

What Makes Teriyaki So Good?

Teriyaki is a traditional Japanese way of cooking that combines salty, sweet, and umami flavors. The soy sauce and sugar make the shiny, caramelized finish that we all love, and the ginger and garlic add warmth and depth.

Ingredients

  • 1/3 cup soy sauce

  • 1/4 cup brown sugar

  • 2 tbsp mirin (optional)

  • 1 tsp grated ginger

  • 2 cloves garlic, minced

  • 1/4 cup water

  • Chicken (thighs or breasts work well)


How to Make Teriyaki Marinade Chicken

Step 1: Make the Marinade

In a bowl, whisk together:

  • Soy sauce

  • Brown sugar

  • Mirin (if using)

  • Grated ginger

  • Minced garlic

  • Water

Stir until the sugar dissolves.


Step 2: Marinate the Chicken

Place chicken in a bowl or zip-top bag. Pour the marinade over it and ensure all pieces are well coated.

  • Marinate for at least 30 minutes

  • For deeper flavor, marinate 2–8 hours in the refrigerator


Step 3: Cook the Chicken

You can cook this in several ways:

Pan-Seared:
Cook over medium heat until browned and cooked through (about 6–8 minutes per side depending on thickness).

Grilled:
Grill over medium heat until internal temperature reaches 165°F (75°C).

Baked:
Bake at 375°F (190°C) for 25–35 minutes.

Optional: Simmer leftover marinade (boil for at least 5 minutes) to use as a glaze or sauce.


Best when cooking this:

⇒ Don’t skip resting the chicken after cooking (5–10 minutes)
