Easy Fajita Marinade Chicken (Not My Original Recipe)

This marinade brings together citrus, warm spices, and olive oil to create juicy, flavorful chicken perfect for tacos, rice bowls, wraps, or salads.
The magic of fajita marinade is in the balance:
Olive oil helps lock in moisture
Lime (or lemon/calamansi) adds brightness and tenderizes the meat
Chili powder gives depth and mild heat
Cumin adds that classic earthy Mexican flavor
Paprika adds subtle smokiness and color
It’s fresh, vibrant, and incredibly versatile.
Ingredients
1/4 cup olive oil
Juice of 2 limes (or lemon or calamansi)
1 tbsp chili powder
1 tsp cumin
1/2 tsp paprika
1–1.5 lbs chicken (breasts or thighs)
Optional add-ins (if you want more depth):
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
How to Make Fajita Marinade Chicken
Step 1: Mix the Marinade
In a bowl, whisk together:
Olive oil
Fresh lime juice
Chili powder
Cumin
Paprika
Mix until fully combined.
Step 2: Marinate the Chicken
Place chicken in a bowl or zip-top bag. Pour the marinade over it and coat evenly.
Marinate for at least 30 minutes
For deeper flavor, marinate for 2–6 hours in the refrigerator
Avoid marinating longer than 12 hours due to the citrus
Step 3: Cook the Chicken
You can cook this several ways:
Pan-Seared:
Cook over medium-high heat for 5–7 minutes per side until internal temp reaches 165°F (75°C).
Grilled:
Grill over medium heat until nicely charred and cooked through.
Baked:
Bake at 400°F (200°C) for 20–25 minutes.
Let rest 5–10 minutes before slicing.
