I just want something I can throw together cook and eat without making a mess in the kitchen.
This is one of those recipes for a ham and mushroom omelet.
It is very simple with a few ingredients but I like to serve it with a big mixed salad as it makes the meal feel more complete. The mushrooms give a savory flavor and the ham makes the ham and mushroom omelet a bit more filling without needing lots of ingredients.
To be honest I like recipes, like this because you do not have to be a cook to make them. 😂

Ingredients:
- 2 eggs
- Sliced button mushrooms, to taste
- 30 g wafer ham, sliced or chopped [any ham you have]
- A large mixed salad [mixed of any vegetables you prefer as a mini-salad]
- Balsamic vinegar, to taste [or any salad sauce you have]
- A small amount of cooking oil or cooking spray, if needed
- A little salt and black pepper
How to:
1. Prepare the eggs
- I just whip them with a fork until the yolks and whites are mixed together. You don't have to make this complicated. Add a pinch of salt and black pepper, if you want.
2. prepare the mushrooms and ham
- Cut the button mushrooms in slices and the 30 g wafer ham in pieces.
- I like them chopped smaller so that they are spread out in the omelet rather than having one big bite of ham and then nothing in the next bite. If that is easier for you, you may also leave the ham in thin strips.
3. cook the mushrooms
- Add the mushrooms to a non-stick pan on a medium heat.
- Cook for a few minutes until softened and some of their moisture is released. If your pan is prone to sticking, add a little oil or cooking spray.
4. add the ham and the eggs
- Add the sliced or chopped ham to the mushrooms and cook briefly.
-> You don't need to cook it for a long time. - Pour the beaten eggs into the pan over the mushrooms and ham.
-> Let the egg sit for a few seconds, then gently move the pan or use a spatula to help the uncooked egg reach the edges. Keep the heat around medium to avoid browning the omelette too quickly.
5. Not necessary - fold your omelette
- Once most of the egg has set but the top is still slightly soft, carefully fold the omelette in half.Mine don't always come out perfectly folded either. 😂
6. prepare your salad and serve
- While the omelette is cooking, prepare a large mixed salad on the side.
- Transfer the omelette to a plate and serve it alongside your salad.

- This recipe is intentionally simple. This recipe can be made more interesting by adding bell peppers, onions, spinach or tomatoes if you have them available.
- Ham can already be salty, so I would taste the omelette before adding too much extra salt.
- The original recipe simply suggests a mixed salad so you do not have to follow a strict list of vegetables. Use what you already have in the fridge.
